Pumpkin is a vegetable that is consumed abundantly in Bodrum, it is cooked or baked, from fried to appetiser or from stuffed to dessert; and given its due by the people from Bodrum. Aunty Saniye, who is a diligent woman from Gurece Village, has made the favourite flavours of Bodrum, Pumpkin Pancake and Pumpkin Pastry, for the readers of our magazine Cekiste.
Ingredients; 1 fresh pumpkin
½ kg cokelek (cottage) cheese
1 bunch of parsley
1 bunch of dill
3 onions
Ground pepper
Olive
oil
Salt
Dough;
4 glasses of flour
2 table spoons of Greek yoghurt
1 cup of olive
oil
2 tea spoons of salt
Preparation; After grating the pumpkin, keep it in the strainer for 10 minutes. Chop parsley, dill and onions. Knead 1 kilogram of flour, adding olive oil, salt, yoghurt and water, to dough. Make 12 pieces of from the dough and let it rest for 15 minutes. Sauté chopped onion adding black pepper and salt. Adding some salt, take the grated pumpkin in a large bowl and add the cheese, olive oil, parsley, onion and dill.
Pumpkin Pancake; Finely roll out the rested dough using a rolling pin. Fold the two sides of the dough and add the filling to the middle. Close the other ends folding neatly as well to prevent the filling from coming out. Cook each side on a heated iron plate. Serve and rub olive oil over the pancakes.
Pumpkin Pastry; If your preference is to make the pastry, place the thin sheets of dough on the tray, adding olive oil on one layer and filling on the next layer, make your pastry with 3 layers. Before putting it in the oven, cut your pastry to large slices and then let it bake in a preheated oven at 220 degrees.
