Pumpkin Hash Browns…


While pumpkins with their eye-catching colours are seen on food stalls, we witnessed the flavour of the famous “pumpkin hash browns of Bodrum” in the kitchen of Chef Halil Vural. 

Our chef whose mother’s side is from Crete has been creating the most delicious tables in the most exclusive places of Bodrum for 25 years. At his own place in Bitez, where distinguished dishes made with local products are served, we listened to the special recipe given by him and wrote it down.

IIngredients:

500 grams pumpkin

5 pieces of spring onions

1 onion

1/2 bunch of dill

1/2 bunch of parsley

A few sprigs of fresh mint

3 eggs

180 gr all-purpose flour

Black pepper

Salt

For frying:

1/2 glass of olive oil

Chop dill, parsley, spring onion and mint and transfer them all into a mixing bowl. Adding eggs, flour, salt and pepper mix well and let it sit for at least 20 minutes. (The mixture should have the consistency to pour from the spoon, if it is dense, you can add some water in it.) Pour olive oil into frying pan and heat a little. Stir the dough well before frying and take one spoonful of the mixture into the pan each time to fry (not deep-fry).Cook until nicely browned both sides. (Flip over just once when one side is browned in order to prevent oil absorbing.)You can eat hash browns hot, cold or warm as you like with yoghurt or with having tea for breakfast…
